Product Description

Shan Sindhi Biryani Masala 60g

Shan Sindhi Biryani Masala 60g is a ready-to-use spice blend for cooking Sindhi-style biryani at home. At €1.45 per pack, it is available at Mini India Grocery with delivery across the Netherlands, Germany and Belgium. One pack works with approximately 750g to 1kg of meat, serving 4 to 6 people.

What is Sindhi Biryani

Sindhi biryani originates from the Sindh region of Pakistan and stands apart from other biryani styles because of its bolder, tangier and more intensely spiced character. The yoghurt marinade is more generous, the whole spices more assertive, and the sourness more pronounced than Hyderabadi or Bombay biryani. It is a dish with real depth of flavour and the Shan masala is calibrated specifically for this style.

What is Inside the Pack

The blend combines whole and ground spices including cinnamon, black cardamom, cloves, bay leaves, star anise, red chilli, cumin, coriander and black pepper. The whole spices build the aromatic base while the ground spice mix handles the marinade and cooking sauce. Souring agents in the blend work alongside the yoghurt marinade to produce the tang that defines this biryani style. The spice ratios are specific to Sindhi biryani and would produce an off-balance result if used for another style.

Which Meat Works Best

Mutton on the bone is the traditional choice and gives the richest result, with shoulder and rib cuts working best. Bone-in chicken pieces are equally authentic and faster to cook. Beef (chuck or shin) is a good option for those who prefer it. In all cases, bone-in cuts produce a better result than boneless because of the collagen they release into the gravy.

Why Shan

Shan Foods has been producing spice blends since 1981 and is one of the most trusted brands among the South Asian community in Europe. The Sindhi Biryani masala is one of their most consistent products, with precise spice ratios that are reliable pack to pack. For a dish where the balance between sourness, heat and aromatics needs to be exact, consistency matters.

Available at Mini India Grocery for €1.45 per pack. Free delivery on orders over 29 euros in the Netherlands and over 39 euros for Germany and Belgium. Free in-store pickup at Gijsbrecht van Amstelstraat 170, 1214 BD Hilversum.

Frequently Asked Questions

What is the difference between Shan Sindhi Biryani Masala and Shan Bombay Biryani Masala?

Sindhi Biryani Masala is tangier and more intensely spiced, built around a yoghurt-heavy marinade. Bombay Biryani Masala is sweeter and uses dried plums as the souring element rather than yoghurt. They produce noticeably different dishes and cannot be used interchangeably.

Does this masala work for chicken or only mutton?

It works for both. Chicken gives a lighter result because it releases less collagen during cooking. Always use bone-in pieces rather than boneless for better flavour and texture.

Why is Sindhi biryani tangier than other biryani styles?

The tanginess comes from the combination of souring spices in the masala and the yoghurt marinade. Unlike Hyderabadi biryani which is more aromatic and subtle, Sindhi biryani deliberately pushes the sour note. This is a characteristic of the style, not a variation in preparation.

Do I need extra spices alongside this masala?

No extra spices are needed. You only need to add fresh ingredients: yoghurt for the marinade, ginger garlic paste, green chillies, fresh coriander, mint and fried onions. These are standard biryani components not included in the spice pack.

Can this masala be used for vegetarian biryani?

The masala powder itself contains no meat-derived ingredients and can be used with vegetables or paneer. The flavour profile is built for meat-based biryani so the result will differ, but it works as a spice base for vegetable rice dishes.
