Shan Biryani Masala is a classic, ready-to-use spice blend formulated specifically for biryani and pilaf dishes. This 50g pack contains a balanced combination of whole and ground spices including cumin, coriander, cardamom, cinnamon, cloves, and dried chillies, blended to produce the warm, aromatic, and layered flavour profile that defines a well-made biryani. One pack is sufficient for a full pot of biryani without any additional measuring or blending of individual spices.

What Shan Biryani Masala Does

Biryani is a layered spiced rice dish where the flavour of the spice blend in the marinade and base is the defining characteristic of the finished result. Shan Biryani Masala removes the need to source, measure, and balance six to eight individual spices separately. The proportions are pre-calibrated for a standard biryani recipe, which means consistent results from one cook to the next without experience-dependent guesswork.

How to Use Shan Biryani Masala

Mix thoroughly so every piece is coated. Marinate for a minimum of two hours, or overnight for best results. Cook the marinated protein separately on high heat until 80 percent done before layering with rice.

For vegetable biryani

Use half the pack in the vegetable marinade and the remainder in the cooking base. Suitable vegetables include potatoes, cauliflower, peas, carrots, and mushrooms. The spice blend works equally well for vegetable biryani as it does for meat-based preparations. Increase the marination time to at least one hour to allow the spice to penetrate the denser vegetable surfaces.

In the cooking base

Fry sliced onions in ghee until golden. Add the marinated protein or vegetables and cook until the base is fragrant and the marinade has reduced. Add a cup of water, cover, and cook until the protein is nearly done. Layer with parboiled Daawat Basmati Rice, fried onions, saffron milk, and mint leaves. Seal and cook on dum for 25 minutes on the lowest heat setting.

In pilaf and pulao
